Gorgeous Coffee Madeleines

Ingredients (12 pieces): 1 large egg, 50 g caster sugar, 1 tablespoon Porta Mokha coffee, chicory essence, 55g self-raising flour (plus a little extra for dusting), 50g melted butter (plus a little extra for greasing), 85g icing sugar, 4-5 tablespoons of strong black coffee (cooled).

  • Preheat oven to 190 degree (Gas mark 5). Thoroughly grease a 12-hole madeleine tin with butter, then lightly dust with flour, ripping out any extras.
  • Put the egg, sugar and coffee and chicory essence into a heatproof bowl set over a saucepan of simmering water. Beat with an electric whisk until the mixture is thick and pale and leaves a trail on the surface when the whisk is lifted.
  • Sift in half the flour and fold in gently, then pour over half the butter and fold in until just incorporated. Repeat with the remaining flour and butter.List item
  • Spoon the mixture into the prepared tin, taking care not to overfill each hole. Bake in the preheated oven for 8-10 minutes, or until risen and springy to the touch. Leave in the tin for 5 minutes, then turn out onto a wire rack and leave to cool.t itemis
  • To make the icing put the sugar and coffee in a small bowl and beat together until smooth. Dop each madeleine in the icing to coat just half. Leave to set on a wire rack.

Sweet & Mild Coffee

Ingredients (Serves 6): 6 tablespoon canned sweetened condensed milk, 6 hot double espresso or strong-brewed coffees, ice cubes (optional).

  • Put a tablespoon of condensed milk (or more to taste) in each of the six cups. Pour a hot double shot of espresso into each cup and stir.

Chilli Espresso Rub

Ingredients (ground coriander, 2 tablespoon ground cumin, 2 tablespoon ground ginger, 1-2 tablespoon dried red chilli flakes or makes 5 Tablespoons): 2 tablespoon dark brown sugar, 1 tablespoon ground coffee, 1 tablespoon chilli powder, salt and pepper.
